Ricotta pancakes turn out to be the world's best thing

Ricotta Pancakes

1 Cup Flour
2 tbs. sugar
1 tsp. Baking powder
1/2 tsp. Baking soda
Pinch of salt

Wet mix

1 cup ricotta
1/2 cup milk (may need to add)
2 egg yolks
1 tbs. vanilla extract

Meringue 
3 egg whites stiff peaks

Method:
Mix wet into dry.  Adjust milk as needed for fairly thick consistency 
Fold meringue into mix
Fry in butter on medium heat
